No fail recipe

I'm just back from surgery -- my husband's, that is, but I feel like I've been through it, too! All seems well for now, but I'm resorting to a quick blog today.



In keeping with the holidays: a favorite recipe, so easy even I never fail.

CRANBERRY SQUARES

1 cup flour
1 cup sugar
1/3 cup margarine or butter
1 1/4 cups whole cranberries
2 eggs
walnuts optional

Mix everything together (my favorite instruction!)

Batter will be lumpy. Don't worry.

Spread in greased dish, 8x8 or 9x9 and bake at 350 for about 35-40 minutes.

They look festive and taste great!

Hubby is doing very well, thanks! MD follow up this morning gave us a good report. whew.

And anonymous (the originator of this recipe) did indeed have a better word for the batter -- stiff. Very high viscosity would be an even simpler way to say it. :=))

What a great sounding recipe! We can get cranberries in the UK, but they[re not as common as over your side of the Pond. However I've got a surplus of home-grown raspberries in my freezer just now, and might try to use those instead. Has anyone experimented with other fruits?

I think I'd put fewer raspberries since they're so liquid compared to "raw" cranberries. Blueberries might be better for consistency.
